Itinerant Professional Course of Italian CuisineThe course is annual and divided into two phases: theoretical and practical. The theoretical part consists of two modules: a series of regional Italian cooking classes conducted at the Hotel School of “Rosmini" College in Domodossola and a trip around Italy with food and wine classes at hotel schools in other regions. The practical part is a long training period (which can last up to ten months) at a high professional level restaurants, assisted by skilled chefs. The first training period may be organized in Piedmont. During this course we will provide the assistance of interpreters and native speakers. You can choose from two annual courses:
At the end of the course, participants take both theoretical and practical examinations. Together with the cooking classes, this course includes an intensive Italian language course, prepared especially for cooking terminology. Course details Professional Course on Italian WinesThis course lasts six month and is divided into two phases: theoretical and practical. The theoretical part is conducted in the AIS (Italian Association of Sommelier) office in Turin and consists of lessons of viticulture, oenology, wine tasting and pairing techniques provided by teachers and sommeliers with professional qualification. In the program you can expect visits to wineries and participate in professional tastings. The practical part is for an internship (lasting five months) at qualified restaurants that provide a high professional level of wine service. During this course we provide the assistance of interpreters and native speakers for participants. There will be two examinations: the first one shall be held at the end of the theoretical course, while the qualifying examination will be held at the end of internship in front of a board composed of AIS sommeliers. Those who pass the exam get a certificate as a professional sommelier AIS, while for those who have not passed it there is a chance to try again the following year, without re-attending the course.
